After having obtained our diplomas in Culinary Arts and Management, we set off to hone our skills and passed, for one by L'Oustau de Baumanière at Monsieur Charial, Potel et Chabot and Le Fouquet's by Jean-Yves Leuranguer, and for the another by Pascal Barbot's Astrance, Yannick Alleno's Meurice and Michel Guérard's cuisine.
After these enriching and varied experiences, it was in Lyon that we decided to open our own restaurant, in the famous rue Royale in the 1st arrondissement.
